Healthy tacos include ingredients like vegetables, seasoning, and meat combinations that are still quite tasty. Some healthy options include corn salsa, black beans, cilantro pesto, fresh avocado and lime, and a bit of cheese.

For two tasty servings of each of these, you will want to gather the following ingredients.

Healthy Taco Bowl

Starting with the ingredients you want to prepare:

  • 1 cup cooked quinoa
  • ½ cup canned kidney beans drained and rinsed
  • 1 red bell pepper, seeded and chopped
  • ½ red onion, chopped
  • ½ cup cooked corn
  • 1 packet organic taco seasoning
  • 2 taco bowls (or just your own bowls if you would like to reduce carbs)
  • Shredded lettuce for serving
  • ½ avocado, cubed

Add the first 6 ingredients to a large skillet over medium heat with oil. Cook until warmed through and serve in taco bowls topped with avocado and shredded lettuce.

Avocado & Lime Salmon Tacos

Prepare the following ingredients:

  • 2 wild-caught salmon filets, cooked and cubed
  • ¼ cup purple cabbage, shredded
  • ¼ cup shredded carrots
  • 1 tbsp. freshly squeezed lime juice
  • 1 packet organic taco seasoning
  • ¼ cup water
  • 1 tbsp. fresh cilantro, chopped
  • Sliced avocado for serving

Place salmon, cabbage, carrots, lime juice, taco seasoning, and water to a large skillet with the oil over medium heat. Cook for 2-3 minutes until warm. Add to the center of the tortillas you prefer and top with cilantro and sliced avocado.

Cilantro Lime Shrimp Tacos

Start with the following ingredients:

  • 12 cooked shrimp
  • ½ red onion, sliced
  • 1 packet organic taco seasoning
  • 1 tbsp fresh cilantro, chopped
  • 1 avocado, sliced
  • Juice from 1 lime

Add the shrimp, onion, and taco seasoning to a skillet over medium heat with the oil. Cook for 2-3 minutes until warmed through. Add to the tortillas and top with cilantro, avocado, and a drizzle of lime juice.

Further tips for healthy cooking of your tacos includes the use of coconut or avocado oil for the cooking of ingredients. Then, for your tortillas, try to make sure you choose some that match the diet you prefer. You may try gluten-free or grain free. Or, if you are tying for as low-carb as possible you can use lettuce wraps.
